Scrambled eggs are quick and easy, but they don’t have to be plain. A few simple dried seasonings can transform everyday eggs into a flavorful breakfast without requiring lots of salt, butter, or heavy ingredients.
These Healthy Flavorful Scrambled Eggs combine garlic, onion, paprika, black pepper, parsley, and optional chives for a savory breakfast that still keeps things simple. A small amount of unsalted butter adds richness, while water or a healthier milk option helps keep the eggs soft and tender.
And for mornings when you want something simpler, you can easily turn the same recipe into basic healthy scrambled eggs by leaving out the additional herbs and spices.
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes
Servings: 1
Serving Size: 2 scrambled eggs
Ingredients
- 2 large eggs
- 4 teaspoons water, unsweetened almond milk, 1% milk, or 2% milk
- ⅛ teaspoon iodized table salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon garlic powder
- ⅛ teaspoon onion powder
- ⅛ teaspoon paprika
- ¼ teaspoon dried parsley
- ¼ teaspoon dried chives, optional
- 1 teaspoon unsalted butter
Instructions
Step 1: Whisk the Eggs
Crack the eggs into a small bowl.
Add the water or milk, salt, black pepper, garlic powder, onion powder, paprika, dried parsley, and optional dried chives.
Whisk until the eggs and seasonings are thoroughly combined.
Step 2: Heat the Pan
Place a nonstick skillet over low to medium-low heat.
Add 1 teaspoon unsalted butter and allow it to melt, swirling it around the pan.
Step 3: Cook the Eggs
Pour the egg mixture into the skillet.
Let it sit for a few seconds, then gently push the cooked egg from the edges toward the center using a spatula.
Continue gently folding the eggs as they cook.
Step 4: Keep Them Soft
Remove the skillet from the heat while the eggs are still soft and slightly glossy.
The residual heat from the pan will continue cooking them for a short time.
Serve immediately.
Want Basic Healthy Scrambled Eggs Instead?
For a simpler version, leave out the:
- Garlic powder
- Onion powder
- Paprika
- Parsley
- Chives
Keep the eggs, water or milk, salt, black pepper, and unsalted butter the same.
This gives you a basic healthy scrambled egg recipe without changing the cooking method.
Water or Milk?
For lighter, fluffier eggs, use 4 teaspoons of water.
For slightly richer and creamier eggs, use one of these healthier milk options:
- Unsweetened almond milk
- 1% dairy milk
- 2% dairy milk
I would avoid sweetened or flavored almond milk for this recipe because it can change the flavor of the eggs.
Helpful Tips
Keep the heat moderate. High heat can make scrambled eggs cook too quickly and become dry or rubbery.
Take them off the heat early. Eggs continue cooking after you remove the pan from the burner.
Use unsalted butter. This lets you control the sodium while still getting buttery flavor.
Seasoning adds flavor without requiring more salt. Garlic powder, onion powder, paprika, herbs, and black pepper help make the eggs taste well-seasoned while keeping the added salt at just ⅛ teaspoon.
