  • 2 eggs, lightly beaten
  • 2 cups frozen peas and carrots
  • 1 cup diced onion
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 3 green onions, sliced
  • 3 tablespoons low-sodium soy sauce or 2 tablespoons regular soy sauce
  • 1 tablespoon low-sodium oyster sauce or 2 teaspoons regular oyster sauce (optional)
  • 1 teaspoon rice vinegar
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • Optional: Sesame seeds for garnish

Instructions

  1. Heat 1 tablespoon avocado oil in a large skillet or wok over medium-high heat.
  2. Season the shrimp with the paprika and black pepper. Cook for about 2 minutes per side, or until pink and fully cooked. Remove the shrimp from the skillet and set aside.
  3. Add the remaining 1 tablespoon avocado oil to the skillet. Pour in the beaten eggs and gently scramble until just cooked. Transfer the eggs to a plate and set aside.
